Justin,
The acronyms all follow the same format. It goes in this order:
- sex of the paddler (M-Mens, L-Ladies, X-Mixed)
- age category (J-Junior, Nothing-Open, V-Veteran)
- age limit for the class (every two years for 18 and under and every 5 years for 35+)
- the type of boat, which can be 1 or more letters. Some more common ones include
K-Kayak
TK-Touring Kayak
UR-Unrestricted Recreational (normally somewhere between a K and TK.)
MR-Medium Recreational (based on length 4.5-5.5m)
C-Canoe
TC-Touring Canoe
SK-Sea Kayak
SSKI-Surf Ski
Different clubs sometime use different acronyms for the type of boat.
- lastly is the number of people in the boat (1-however big a boat you can get)
So to take an example, a XV55TC2 would be one man and one woman both over 55 paddling a touring canoe.
This link has a reasonable description of those classes which are not international ones:

Hope this helps
